Ingredients:

Jar of grape leaves
½ cup lentils, cooked ½ cup onions, chopped
½ cup rice, cooked 2 cloves garlic, minced
¼ cup sundried tomatoes, sliced
Juice of ½ lemon
2 tsp. Tomato paste
Fresh mint (several sprigs)
1 cup bell pepper, chopped
Fresh thyme (several sprigs)

Spices: ½ tsp each or to taste – Chili powder, cumin, cinnamon, dried oregano


Sauté the onions, garlic, peppers and spices in 1-2 Tbsp. olive oil until cooked through.  Salt and pepper to taste.  Add the sun dried tomatoes, tomato paste, rice and lentils.  Stir together.  Add water if needed.  When the sundried tomatoes are soft, add the lemon juice, thyme and mint. Rinse grape leaves in water before adding filling.  Take one grape leaf at a time, cutting out the stem, put a spoonful of the lentil-rice mixture at the base of the leaf.  Fold the leaf’s edges in as you roll the leaf into a cylinder, like rolling a burrito.  Repeat with all of the leaves.
