2 sm-med. Carrots grated
2 cloves garlic grated
½ jalepeno pepper grated
1 med. Onion, chopped finely

Parsley chopped finely
1 bell pepper chopped finely (any color will do)
Can of organic tomato sauce (or 4-5 fresh plum tomatoes)
Fresh oregano

Sautee carrots, garlic, jalepeno, onion  together in frying pan with heated sunflower oil (any oil will do).  Chop parsley finely and add to sautéing vegetables.  Add bell pepper.  Flavor with a touch of salt.  Sautee for  appx. 10-15 min.   Add a can or organic tomato sauce.  If you are using fresh tomatoes don’t use canned sauce.  Use 4 plum tomatoes, chopped, if using fresh.  Simmer for another 15 min. or until it gets the right thickness for your taste.  Add a pinch of fresh oregano for the final touch.
