chong-qing-chicken

When I saw the first post’s topic is anything that I am interested in, I think about food automatically. I admit that I love food, especially Chinese food of course because I am Chinese. In China, food is not only something to feed people but also a culture. Different area of people in China have different habit of eating and making food. For example, people from Chongqing and Sichuan love spice, whereas people from Shanghai and Guangzhou love sweet. I was looking for some website that introduce traditional Chinese food that are written in English so that I could explain everything to my American friends, and I found this site which I think is pretty good. Here is the link to one of the articles on that website: http://appetiteforchina.com/recipes/spicy-sichuan-wok-fried-chicken. This is the one that introduces how to make Chongqing chicken, which is one of my favorite dish. In this article, the author suggested that “heat the 3 cups of peanut or vegetable oil in your wok until it registers 350°F on an instant-read oil thermometer. (Kuan)” I would personally say that this is a west culture way to cook this kind of dish. Traditional Chinese way to cook, or I should say the way my mom cooks, is that to heat at least 5 cups of oil with green onions, ginger, garlic, and peppers together. West people would think eat too much oil is not good with health, but the way this dish cook is called fry, which needs a lot oil just like Mcdonald’s fries do.

There are so many different ways to cook in China, and we can make several different dish with different taste by using exactly same food material. I believe this is why Chinese food culture is very important to Chinese people, and it is a very interesting thing to many of West people.

I would like to share with you guys about other stories related to Chinese culture if you are interested, and I also like to hear about stories in the US.
