Jiro Dream of Sushi is a great, mouth-watering documentary and I urge all to watch it. It is hard to see it in the trailer, but the director used a number of different camera angles, shots from different parts of the restaurants and great use of depth of field to make this “tiny” restaurant larger than it really is.
The trailer alone does not make it convey all the points I want to make, but it is available on Netflix. The signature shot in this documentary can be seen in the 0:27 mark of the trailer. The shot is stationary and David Gelb, the director and cinematographer, has the focus of the shot already set. Everything, even the plate is out of focus. The sushi chef lays the sushi on the plate and his hand comes back out of frame and the audience is left admiring the characteristics of the sushi, the intention of the director. As I continue to learn and grow as a filmmaker myself, I don’t know if that is an effect he created in editing or not, but I like to imagine it was his intention to have that shot and had the aperture as high a possible to create that type of focus.
I highly encourage everyone to see this film.
Since this came out, it has always been one of my favorite examples of tight editing. The visuals are synced exactly to the music, establishing perfect pacing. And, the story is just as strong! I love this piece.
